From Monday 2nd – Sunday 15th June, we’re painting the town red for British Tomato Fortnight – feast on some de-VINE tomato-inspired specials to celebrate this versatile ingredient.
Tomato & Courgette Tart (Vegan)
This plant-based plate is bursting with flavour! A flaky vegan puff pastry brushed with black olive tapenade, topped with slow-cooked onion confit, and layered with marinated baby courgette and tomatoes.
Baked to golden perfection and served with piquillo peppers, basil oil, micro herbs, and olives – a tart with heart!
Heritage Tomato & Burrata Salad
A creamy dream! Isle of Wight heritage tomatoes meet velvety burrata and soft avocado chunks, all dressed in a zesty lemon vinaigrette on a bed of lovage pesto.
Finished with garlic croutons, olives, and a sprinkle of black olive powder – a Heartwood twist on a classic, it’s caprese-tively good.
